Recipes- Breakfast Casserole!

I don't know about you guys, but my family adores breakfast. Anytime really. So we often do a breakfast for dinner just because. This time, I tried a new breakfast casserole and it was a hit! Here is the recipe! Give it a try and let me know what you think or if you make any adjustments! I love seeing variations!
Ingredients:
- 1 dozen eggs
- 1 1/2 cup of milk
- 1 package of sliced mushrooms (optional)
-3 green peppers (optional)
- 1 large onion
- 2 boxes of precooked sausage links (20 links)
- 1 lb of cheddar cheese
- 1 bag of tater tots
- 1 stick of butter or margarine
- 1 tablespoon of minced garlic
- 1 teaspoon of salt
-1 tablespoon of pepper
-1 tablespoon of Mrs. Dash
- Pam cooking spray
***You can substitute the sausage for ham/bacon or add multiple types to your dish. For a low carb option, tater tots can be substituted for cauliflower. Just make sure to precook your cauliflower well with butter before adding to the casserole.***

When I make this dish, I precook everything except for the eggs. You don't necessarily have to do this but not everything may be completely done. Precooking also helps cut out the extra water.
Instructions:
Start by dicing your onion, green peppers, and mushrooms into a large bowel with your minced garlic. In a skillet, heat butter on high until melted. Add the veggie mix and saute until done. Your green peppers will be soft and your onions clear. Turn off the heat and drain any extra liquid from the mix. Cover and set aside for now. Make sure to preheat your oven to 450 degrees at this point.
Next, take your precooked sausage links and spread them out on a plate. To help cut down on grease, place a paper towel under the sausage links if you like. Cook in the microwave for 2 minutes. These do not need to be hot. Just warm enough for your to cut them up and add to your vegetable mixture. Set it aside for now.
Grab a 13 x 9 baking pan. I prefer to use a glass pan but really any will work. Spray the pan well with Pam cooking spray to prevent sticks. I use Pam Butter Flavor for a complimenting flavor since it will inevitable end up on your food lol. Open your bag of tater tots and spread out in the bottom of the pan. Pop those in the oven for about 10 minutes. You do not need these to be completely cooked but you want them a little over half done at least. When done, pull the pan back out of the oven. Turn the oven heat down to 350 degrees.
Add your veggie and sausage mix to the pan. Make sure to spread it out into an even layer on top of the tater tots. Next, beat together your eggs, milk, and seasoning in a bowel. Make sure to mix well. Pour the egg mixture evenly over the casserole. The egg mixture should fill the pan and create a thin layer over the top of the other ingredients. Add a light layer of cheese on top. Do not add too much cheese at this point. You need to be able to check that the eggs are done and the cheese will hinder that. Also, you don't want the cheese to burn during the cooking process.
Now it's time to cook the whole dish on 350 degrees for 30 - 40 minutes. You should start to notice the bottom of the dish turning brown (if using a glass dish like I did). Another way to test it is to use a clean butter knife. Carefully stick it in the center of the casserole and then slowly pull it out. The knife should pull back clean (like when you make brownies). If it doesn't, the eggs need to cook a bit longer. Add remaining cheese to the top right after removing from the oven.

Let cool for 5 - 10 minutes before serving. There are multiple ways you can serve this dish. Some of my kiddos love to add ketchup. I prefer to add salsa, jalapenos, and a little Tabasco sauce. My husband likes to put his on a flour tortilla with sour cream and salsa, Some of our family likes to eat it without any toppings. It is completely up to you! Enjoy!
