Recipes- Chicken Fajitas- Crock Pot Style

I make two versions of Fajitas in my household. One is the long version. Saute on the stove, hours of prep and cook time, high temperatures, etc. The other, is a modified version made for the perfect crock pot cooking! I adore this recipe when I'm looking for a quick fix on a busy day! Let me know what you think and if you try it!


Ingredients:

- 1-2 bags of boneless skinless chicken tenders (frozen)

-1-2 packets of taco or fajita seasoning (depending on how many bags of chicken you use)

- 1 can of diced tomatoes with green chili's (10 oz)

- 3 red peppers, 3 yellow peppers, and 6 green peppers

- 1 small lime

- 1 small lemon


How to make:


Place the tomatoes in the slow cooker. Place the chicken breasts on top and season them with the seasoning packet. Add in the sliced bell peppers, Add in some freshly squeezed lemon and lime juice (only use half the lemon and half the lime), Cover and cook on high for 5 hours. Mix everything together and taste. Remove the chicken from slow cooker, shred with a fork and place it back in the slow cooker. Season with salt and pepper to taste.


Optional step: I prefer to squeeze the rest of the lemon and the lime over the meal once it is done cooking. Mix in. I also make 2 cups of white rice with butter and mix that in with the fajita mix.


Serve on a warmed flour tortilla with salsa and sour cream to taste. Enjoy!
