Here comes another recipe that my family absolutely loves! This one is a simple side dish that is a nice alternative to french fries. I warn you, this can get messy! Let me know what you think!
Ingredients:
- 5 lbs of potatoes (any kind you prefer. I use baby red but I have used regular potatoes in a pinch)
- 2 tablespoons of Olive Oil
- 1 tablespoon of sea salt
- 2 tablespoons of minced garlic
- 2 tablespoons of black pepper
- 4 tablespoons of honey (any kind you prefer. I use only local honey from my area)
- 2 plastic bags
- Aluminum foil
- 1 deeper cookie sheet/shallow baking dish
How to make:
1. First, clean and dice your potatoes. You can peel if you like but I leave the skins on.
2. Preheat oven to 450 degrees (F) and cover your baking dish/cookie sheet with aluminum foil. Be sure that the aluminum foil comes up the sides of the pan to make a tray. Use only one piece for easy clean up.
3. Double up your plastic bags (one inside the other). Place diced potatoes and all seasoning into the plastic bags. Tie the bags closed tightly and mix/shake. Be sure to get a nice even coating on the potatoes. If it seems to dry, you can add more honey or olive oil to ensure an even coating.
4. Open the bags and pour coated potatoes onto your covered baking dish/cookie sheet. Make sure to spread them out into a single layer as much as possible. Drizzle with a little extra honey and a light coating of sea salt to taste.
5. Bake at 450 degrees for 30 minutes or until potatoes start to brown. They should be soft but not mushy.
(Optional: add a light coating of Mrs. Dash or No Salt Seasoning for a little extra flavor at this point)
6. Let cool for 5 minutes and enjoy!
